Nobody dislikes all tacos because there is such a variation of ingredients and flavours.

No, I say I don't like sushi all the time. Most of it involves raw fish and seaweed. Two things I really really don't like.
It's easier to say that than to explain away when I'm asked out to a sushi restaurant.
I could make it a long winded point, as is your wont, but I don't care for that either. Nip it in the bud, politely, but firmly.
