Can't. No worries. Monday will be along.
For under 10 bucks you could have potatoes growing in a bag year round on your deck, patio, or other suitable part of your rental home. The bags have a zippered inspection/extraction window so you can take out what you need as you go. Potatoes will grow anywhere.

That would be great with a house. Not really practical in a one-bedroom apartment. Creative thinking, though.
Have you got a window or balcony? Those bags work well. Just add sunlight.

No balcony. I could get a console table to put in front of the window, probably, if the AC unit isn't in the way. That'll have to wait until the end of the month.
Amazon sells cheap 18-24 watt LED grow lights, some with timers.
You could grow sprouts, lettuces, rocket, herbs, whatever.
Some people do aquaponics from their fish tanks.
There's no excuse for going hungry....
