It's authentic. I don't know if you would think it's better. I think it's above and beyond. There are so many different types to be made...

One of my favorites is a breakfast salsa I grew up with. You slice bacon into small chunks, fry it and then add typical salsa ingredients, chopped tomato, onion, diced hot pepper, cilantro...it's delicious with scrambled eggs, fried eggs...couple of tortillas...tasty Mexican breakfast.

It's amazing. Try it, you'll love it. Even a simple breakfast burrito of refried beans with a nice thick cut slice of bacon is delicious.

We should start a thread with everyday recipes from home on the forum.

Potatoes are South American in origin. My kiddos have a South American father. My son freaking loves potatoes. It's amazing how much he likes them.

I think beans are the carb of choice in Mexico. But Mexicans do it potatoes. Potato tacos are a thing, as in mashed potatoes and cheese then deep fried tacos. In San Antonio they make puffy tacos with a ground beef, onion, peer and cubed potato filling.

Chileans will eat a meal with a protein, salad, and just a boiled potato.

That's the big meal of midday.... hardly any breakfast, huge lunch, small evening snack.... unless there's a party later on in which case it's mostly meat and a lot of it....

Starting with mild mini chorizos on buns with gelatinous mayonnaise to wet the appetite and proceeding to blood sausage and big cuts of beef steaks smothered in salt.

...but everybody by that point is smashed on red wine, pisco, or other spirits and could eat a cow.

Last visit to my mom she made a salsa without cilantro. I didn't eat any. She asked me why I wasn't eating. No cilantro I tell her. We went and got some cilantro and added it in. Fixed!
