I couldn't be vegetarian. Too Mexican and American for that.

I don't care for sea bugs like shrimp or lobster. Crab legs are OK, but they have to be fresh from the boiling pot and the butter to dip it in has to be garliced.

Pork and beef are cheap here, so fish is a nice change

I live 6 hours from the ocean, so it's not easy to find seafood cheap

We got lots of pork, beef and poultry from round about here. Most of the nation's pork comes from Illinois.

Couldn’t find leeks the main recipe calls for,!so I got some small Brussels sprouts, which are more flavorful hopefully they don’t ruin it

The Brussels might be too potent… do you have celery and green onion @Admin.

I would slice both celery and the onion or shallots on a deep angle and not too thick so you get the texture of leeks
