I agree with you about Fallout and Fallout 2, though -- the isometric turn-based style... takes getting used to.

I play New Vegas on Very Hard difficulty, Hardcore mode, with fast travel disabled.

But I use mods as workarounds. Instead of insta- fast travel, I have mods that let you travel with caraveneers, travel with a tribe called the Transporters, or use trains + boats. To ease the carrying limit, I have a functional backpack, and a pack brahmin.

So while it's a lot more planning-intensive, you can still do almost the same stuff as in a non-hardcore playthrough.

I think it's the play style of FNV. I mean, you *can* play it like a shooter 'n' looter, a la Borderlands, but if you lean more into the roleplaying spirit of it, it's more like a platform to play out full-on stories in.
