Consider using solid tongue and groove boards instead of paneling... drop ceiling tiles can be repainted or replaced as needed. Your electrical situation is cheap and easy if you run the conduit yourself and get an electrician to staple and join things up.

my son in law can do electrical work so I'll have him do that for me.

Do you have or know any construction or hands on types in your family or friends network? Your situation is far cheaper than most if you have somebody who knows the building codes and how to do the easy work yourself.
