It surprised me to see cashews in it. I've never seen a sandwich with those in it.
No, no... the cashews and mandarin are individual snacks. The iced tea was brewed with mandarin rind/zest. Also separate.
Although.... a cashew paste would go well in a sandwich...maybe.

I make a cashew pesto that is amazing anyway its eaten.
I'm thinking it would go well in a salad roll but not so much with lunch meat... maybe poultry would be OK.

Shit yeah! Ill tell you how i do it. Bare with me....unless im baking i do not use measurements. This is all eye balling
I like a roasted lightly salted cashews. Ill chuck a cup or so in the food processer. Grind those up into nut dust.
Then i add basil leaves and lemon juice. Ill usually sqeeze two lemons in there. Add some minced garlic and olive oil. Again...however much you want.
You get to decide the consistency. I just taste mine until its right. If its too pasty...just add SMALL amounts of water.
Thats it. You can add salt and pepper but if used salty nuts that takes care of the salt lol.
How do you often have your pesto... with pasta, on sandwiches, as a marinade or an ingredient for a curry sauce maybe?

I fell asleep in the chair after work and woke up hungry. I know, it's only the middle of the afternoon but I started at 4:00. I walked up to Jerry's for some burgers in sauce from the hot bar. (i'm somewhat addicted to them) I saw that they had pizza burgers and I couldn't resist trying them. Do I want everything on them? Yes. OMFG. Burger, sauce, cheese, pepperoni, mushrooms and onion. Sooo good.
