I've tried it but it's to greasy for my liking. If you ever try it make sure it's cooked well or you will get Trichinosis.

Trichinosis.. Bad stuff. Nicaraguans love to make soup from Iguana. In fact it’s quite a flavorful soup as they describe. It’s against Costa Rican law to kill any land animal. This means road kill is fair game. I see people picking up dead ones from the road now and then.
