'Cowboy' has at various times (Cochise County, AZ in the 1800s, for example) been specifically used to refer to cattle rustlers.

So the use of 'cowboy' today would be like if, a hundred years from now, race car drivers are called carjackers.

Probably. I'm sure Annie Oakley's 'Wild West Shows' featured performers who got referred to as 'cowboys' to invoke the outlaw thrill of it.
