While the concept of cookies is not exclusively Cornish, the Cornish fairing is a well-known type of ginger biscuit with origins in Cornwall, England. Cornish fairings are sweet and spicy ginger biscuits, traditionally sold at fairs and given as gifts. The term "fairing" refers to a treat sold at fairs, and in Cornwall, this evolved into a specific type of ginger biscuit.
