Just got home from work after stopping off at the beer store for a case of Yuengling and a 12-pack of Troegs.
I stood behind that table cutting Father's Day steaks almost all damn day! First thing, cutting the meat for the service case and helping to get that set up. (i started at 7:30, went to the freezer to see if i could get to the spareribs and baby back ribs we needed aaand they were the bottom layer of a bakery skid. oh, well. also made a couple tags for the service case and a sign that Boss wanted for the outer case while i had a chance) Actually, the first thing I did was cut six 8 ounce tenderloin steaks for a customer. At 7:45 a.m.! I was going to put the saw together and clean the service case windows before getting started. NOPE.
After setting up the service case, it was time to replenish what was selling like wildfire. More tenderloin steaks, more ribeye steaks, more tenderloin steaks … and the marinated chicken kabobs were gone and we were out of precut vegetable kabob kits. So, I had to go to produce for peppers and onions and cut them up to get the chicken kabobs made. And we were going to need beef kabobs, as well. More tenderloin steaks and more ribeye steaks. Crazy Shit.
I trimmed and cut at least 10 beef tenderloins @ $21/lb. (3 of them were part of a special order for tomorrow) I cut almost 3 Prime beef ribs @ $15/pound for ribeye steaks. That doesn't sound like much but I was cutting half a rib at a time to avoid overcutting and you can only pile them so high. And the last one was a bone-in rib, so I had to cut the bones off. I even cut a second piece of Kobe beef for NY strip steaks @ $30/lb. It was a good day for service case sales, indeed.
I managed to get out on the floor and help get our frozen section stocked at the end of the day. I only had 40 minutes left in the day and could have called it quits but I kept going. With 20 minutes left, I was getting worried but I finished it up right quick. Ten minutes to go and I was at the sink and washing things. I don't like to shit on the next guy. Washed MY knives and glove, dried them and put them away with a couple minutes left to spare and got the hell out of there.
I'm sitting on the couch and winding down. My anxiety has been out of control, lately. Hoping to build on some positive energy.
