One interesting about lychees, they have this skin, right between the peel and the pulp.

It's white, but it starts turning reddish and then purple very quickly

If you remove the peel carefully you can managed to keep the skin intact

It's a little bitter, but it contains a huge amount of antioxidants.

They say it's supposed to be very good for you
