MEAT - What kind of flesh do people?

I have a duck in my freezer which has been there since last Xmas. Maybe it is time to cook it up.

Of the listed options: Beef. That said, the omission of bison from that list gives me just cause to SMITE you.

I mean... I can't actually do it, obviously, not knowing where or who you are beyond this board.

But I want you to know that I have a good reason to do it.

I like bison...or liked it as a kid but I don't see many bison farms or butchers that carry the stuff.

It would probably be more expensive than domestic beef jerky.

It can be had. But, yeah, it's more expensive than beef, for obvious rarity-related reasons. But so tasty.

Hmm, back in the 1980's our local Fuddruckers location offered bison burgers. I miss that chain. They used to have on site butchers freshly grinding the meat for their patties each day and because it was fresh you could order it however you wanted it cooked which was not very common back then.

The only location I know of any where near me now is in the Orleans Casino off strip in Las Vegas. I may even visit there just to have a Fuddruckers again.
