bell pepper
Mexican grey squash
carrots
white and red onion
tomato
cilantro
green onion
tomato sauce
jalapeno or serrano peppers
rice

"Struggle" Food?

Must you politicize everything?

Why not just "Cheap Recipes?"

That's a good list though. Except the cilantro. That shit is disgusting.

It's not politics directly. It's poverty.

Cilantro is amazing unless you have that "soap gene" taste bud thing going on.
It has strong connotations of Maoism with their Maoist "Struggle Sessions."

I know Lefties don't like to believe it, but poverty doesn't care about political ideologies.

Anyway, carry on. It's a good idea for a thread. Sorry for the deflection.

And yeah, I have the hate cilantro gene.

No worries. You're just being you. I was a poor kid. We struggled. And we coped. My parents were poor kids. Mexican people do a lot with what they do have available.

I am going to post YT videos and/or recipes from people I see on social media. It's easier than typing out my own recipes.

I love frijoles. If made properly, they are the flavor paste of the gods. My Brother-in-Law used to make huge batches and put some weird Zacatecan spice hex on it. In fact, I bought some flour tortillas today and now I'm gonna have to check my pantry to see if I got any canned frijoles because I'll want that flavor paste on tomorrow's breakfast.

Goes good on sandwich bread, too. Shit, everybody knows the classic PB&J, so why not frijoles and shredded cheese?

Lard is key to making refried beans.

If you realy want them to be divine, make them at home and cook with a smoked ham hock, white onion and garlic.

Clean and soak your beans, few hours is enough 3-4. In a pot, cook the ham hock for an hour or so. Then add beans, half a large onion, and half a head of garlic (split in half), and a bit of salt...careful with salt because of ham hock.

Lots of people in Mexico add an herb called epazote. It's a matter of taste.

That's the base of a torta, white bread and refried beans. There are two basic white bread rolls that are used most often for tortas in the states, more varities in Mexico. They are "bolillo" (also slang for a white person in Texas since most of you know "gringo") and "telera". Roll is split in half, layer of refried beans, then a meat (any kind you like) or veggie, avocado, cheese, salsa...

Ramen, butter sandwiches, peanut butter, pancakes, grilled cheese, mac n cheese, soup, grits. Not eggs anymore, back when they where a couple dollars a dozen could get you good mileage.
